Matiu enjoys learning about different foods and cultures, and in the kitchen, he uses his creativity to prepare delectable meals that burst with flavour using seasonal ingredients. He is a self-taught chef, tradesman, dad, husband, and enthusiast of delicious cuisine designed to nourish valued relationships with family and friends. Please enjoy this tasty\u202fMediterranean meal Chef Matiu created for a family of four for under $25.<\/p>\n<h4 class=\"p2\"><span class=\"s1\">Kabob Koobideh<\/span><\/h4>\n<p>(Servings: 4)<\/p>\n<p>1\u00bc lb organic ground beef<br \/>\n\u00bd red onion, grated (squeeze out liquid)<br \/>\n1 Tbsp sumac<br \/>\n1 tsp cumin<br \/>\n1 egg<br \/>\n1 handful parsley, chopped (2 Tbsp dried)<br \/>\n\u00bd tsp sea salt, and pepper to taste<\/p>\n<p class=\"p4\"><strong><span class=\"s3\">Directions: <\/span><\/strong><span class=\"s2\">Soak 10 wooden skewers in water for 15\u201320 minutes. Preheat the barbecue to 400 degrees. Combine all ingredients in a medium-sized bowl. Mix well. Make six kabobs. Shape each around 2 skewers, 1-inch wide. Refrigerate skewers on a pan, covered. Prepare salads, tzatziki, and bread. When ready to eat, grill skewers 10\u201312 minutes, flip to brown. <\/span><\/p>\n<h4 class=\"p6\"><span class=\"s2\">Sumac Cucumber Salad <\/span><\/h4>\n<p class=\"p1\"><span class=\"s1\">1 cup fresh dill, chopped, add 2 cups chopped mini cucumbers, 1\/8 of a red onion, sliced thin. Dressing: 1 tsp sumac, \u00bc tsp ground pepper, \u00bd tsp sea salt, 1\u00bd Tbsp extra virgin olive oil, and 1 Tbsp red wine vinegar. Mix and enjoy. <\/span><\/p>\n<p class=\"p3\"><span class=\"s2\"><strong>Sumac<\/strong> is a flavourful spice used in many cuisines. It is made from the dried berries of the sumac plant and has a tangy, acidic taste with hints of citrus and salt. Look for sumac at your local Persian or Middle Eastern grocer.\u00a0<\/span><\/p>\n<h4 class=\"p6\"><span class=\"s2\">Tomato Salad with Balsamic Drizzle <\/span><\/h4>\n<p class=\"p3\"><span class=\"s2\">3 cups cherry tomatoes, cut in quarters, add handful fresh parsley. Dressing: \u00bd tsp sea salt, \u00bc tsp pepper, 2 tsp balsamic vinegar, and 1 Tbsp extra virgin olive oil. Mix and serve.<\/span><\/p>\n<h4 class=\"p8\"><span class=\"s2\">Tzatziki <\/span><\/h4>\n<p>1 cup plain yogurt<br \/>\n1 clove garlic, minced<br \/>\n1 mini cucumber, grated<\/p>\n<p class=\"p3\"><span class=\"s2\">Add chopped dill, \u00bd lemon, juiced, \u00bd tsp sea salt, and \u00bc tsp pepper. Mix and use for dipping. <\/span><\/p>\n<h4 class=\"p6\"><span class=\"s2\">Yeast-Free Flatbread <\/span><\/h4>\n<p>2 cups flour<br \/>\n\u00bd tsp sea salt<br \/>\n3\u00bd Tbsp unsalted butter<br \/>\n\u00be cup milk (dairy or plant)<\/p>\n<p class=\"p9\"><span class=\"s3\"><b>Directions: <\/b><\/span><span class=\"s2\">Combine butter and milk over heat until butter is melted. Add in the flour, salt, butter, and milk in a medium-sized bowl. Knead mixture for 2 minutes on a floured surface. Cover for 30\u202fminutes at room temperature. Cut dough into 6 portions, roll into balls, and flatten into 8-inch rounds. Heat oil in a non-stick pan over high heat. Cook for 1\u20131\u00bd minutes until golden, and flip for another 45 seconds until both sides are puffed up with golden brown patches. Keep wrapped in a tea towel to serve warm.
